Basil fried rice

INGREDIENTS:

1- 2 cups cooked white rice

Garnish:
1/4 cup chopped green onion
1 red bell pepper thinly sliced
1/2-3/4 cup chopped basil leaves


Main Ingredients:
4 cloves crushed or minced garlic
1 onion chopped
1/2 block firm tofu cubed
About 2 cups of finely chopped below vegetables:
carrot, green beans, squash., mushrooms, broccoli, sugar snap peas
(I used mushroom yellow squash and green beans)

Sauces/spices:
1 tablespoon soy sauce/tamari
1 table spoon ponzu ( if no ponzu just double soy sauce)
1 tablespoon brown sugar
salt to taste
black pepper to taste
1 tablespoon sriracha

METHOD:
Heat 2 tablespoon oil on wok
When hot add garlic when it sizzles and turn golden add veggies and onion
saute for 2 minutes
add tofu mix well saute for another 2 mins
add all sauce/spice ingredients mix well.
Add rice, fry for a minute
Add garnish mix well

Serve hot with sliced cucumber or grated carrots on side.

Paneer lawabdar or Paneer lababdar

Paneer in ajwain flavored gravy
Servers 6 nicely
Ingredients
3/4 spoon ajwain seeds
1/2 spoon jeera
3 tablespoon butter
2 tablespoon flavor less oil(i used ground nut oil)
2 medium sized yellow onion chopped nicely
1 spoon minced garlic
1 spoon grated onion
1-2 spoon brown sugar
1 spoon turmeric
1/2 spoon chilli powder
1 heaped spoon coriander powder
1 spoon flavorful garam masala
pinch of kasthoori methi
2 cups crushed tomatoes or whole deskinned tomatoes whirled to paste
1 can evaporated milk
1.5 - 2 cups water
about 1.5 cups panner cut into big squares
salt to taste about 1.5 -2 spoon
2 table spoon sour cream(optional)
Method
heat butter and oil
add ajwain and jeera when they crackle or sizzle add onions, ginger garlic.
saute in medium flame for 5 minutes when they sweat i.e soften add brown sugar mix and leave it to carmalise
When onion start to get slight brown add turmeric, chili powder and dhania powder mix nicely
Add salt and crushed tomatoes
let it simmer for 5 minutes
add garam masala
simmer for 5 more minutes
Add evaporated milk slowly so it doesnt curdle( a pinch of baking soda added after adding milk also helps to prevent curdling)
Add sour cream, kasthoori methi , microwave paneer for 30 seconds and add that too.Let it simmer for another 10  15 minutes


Enjoy paneer lawabadar with roti, rice or naan.

If possible prepare couple of hours before serving so the flavors gets absorbed by paneer.
