Tomato tofu curry and chili broccoli


Serves 4 people

Tomato tofu curry and Chili broccoli































Tomato tofu curry

5 - 6 tomatoes chopped fine or 1 can chopped tomatoes
1 red bell pepper diced
1 onion finely diced
1 spoon curry powder
1/2 spoon cayenne or chili powder
3/4 spoon turmeric
a pinch of cumin seeds
1 slab tofu cut in squares
1 spoon green curry paste(optional)
salt to taste
1/2 cup coconut milk
1 tbsp butter + 2 sp oil


Heat butter + oil
When sizzles add onion, cumin seeds
saute for 10 seconds
add curry powder turmeric cayenne powder saute nicely
add tomatoes, red bell pepper, salt. Cover and cook for 6-10 minutes till tomatoes become mushy

now add coconut milk and green curry paste( if using.) Let it simmer
With hand held blender grind contents(if no hand held blender user food processor)
Add tofu simmer and serve with rice and chili broccoli(recipe below)


Chili Broccoli

3 teaspoon oil
1 teaspoon red chili flakes
3 to 4 garlic cloves crushed
2 heads of broccoli florets
salt to taste


Heat oil in a non stick pan when smoking add red chili flakes, when aroma comes add broccoli salt garlic.
Slightly stir and close with a a lid leave for about 5 minutes
It will be done.
