Hawaii roll sandwich

Heat olive oil add sliced white onions red and green bell pepper salt pepper kasthoori methi red chillies powder salt. I left it in cast iron till it was cooked and soft.

Now take Hawaiian sweet roll. Break along middle.Take a slicing knife and slice through. If using oav this is not needed.

Take a foil pan spray Pam
Arrange lower half 
Cover whole area with cheese slices I used pepper jack Sonoma brand from Costco

Now spread onion bell pepper mixture over cheese
Cover with top half of buns.

In a microwave bowl melt two tablespoon butter add two tablespoon oil kalonji seeds punch salt kitchen king masala pour over the buns

Close with foil

Preheat oven 350 keep for 9-10 minutes

Serve hot

Basil fried rice


1- 2 cups cooked white rice

1/4 cup chopped green onion
1 red bell pepper thinly sliced
1/2-3/4 cup chopped basil leaves

Main Ingredients:
4 cloves crushed or minced garlic
1 onion chopped
1/2 block firm tofu cubed
About 2 cups of finely chopped below vegetables:
carrot, green beans, squash., mushrooms, broccoli, sugar snap peas
(I used mushroom yellow squash and green beans)

1 tablespoon soy sauce/tamari
1 table spoon ponzu ( if no ponzu just double soy sauce)
1 tablespoon brown sugar
salt to taste
black pepper to taste
1 tablespoon sriracha

Heat 2 tablespoon oil on wok
When hot add garlic when it sizzles and turn golden add veggies and onion
saute for 2 minutes
add tofu mix well saute for another 2 mins
add all sauce/spice ingredients mix well.
Add rice, fry for a minute
Add garnish mix well

Serve hot with sliced cucumber or grated carrots on side.

Paneer lawabdar or Paneer lababdar

Paneer in ajwain flavored gravy
Servers 6 nicely
3/4 spoon ajwain seeds
1/2 spoon jeera
3 tablespoon butter
2 tablespoon flavor less oil(i used ground nut oil)
2 medium sized yellow onion chopped nicely
1 spoon minced garlic
1 spoon grated onion
1-2 spoon brown sugar
1 spoon turmeric
1/2 spoon chilli powder
1 heaped spoon coriander powder
1 spoon flavorful garam masala
pinch of kasthoori methi
2 cups crushed tomatoes or whole deskinned tomatoes whirled to paste
1 can evaporated milk
1.5 - 2 cups water
about 1.5 cups panner cut into big squares
salt to taste about 1.5 -2 spoon
2 table spoon sour cream(optional)
heat butter and oil
add ajwain and jeera when they crackle or sizzle add onions, ginger garlic.
saute in medium flame for 5 minutes when they sweat i.e soften add brown sugar mix and leave it to carmalise
When onion start to get slight brown add turmeric, chili powder and dhania powder mix nicely
Add salt and crushed tomatoes
let it simmer for 5 minutes
add garam masala
simmer for 5 more minutes
Add evaporated milk slowly so it doesnt curdle( a pinch of baking soda added after adding milk also helps to prevent curdling)
Add sour cream, kasthoori methi , microwave paneer for 30 seconds and add that too.Let it simmer for another 10  15 minutes

Enjoy paneer lawabadar with roti, rice or naan.

If possible prepare couple of hours before serving so the flavors gets absorbed by paneer.

Thai red curry paste with at home ingredients


Set 1:
5-7 dry red chillies soaked , or fresh red chillies (more if you like it spicy)
2 strips of peel from  lemon
2  lemon leaves
3-4 huge shallots or 10 little shallots
3-4 garlic cloves
2 inch ginger
1/2 spoon black pepper corns (whole black pepper)

1 tablespoon coriander seeds
1 teaspoon cumin seeds

Dry roast 1 tablespoon coriander seeds and 1 teaspoon cumin seeds

Grind set1+set2 to a thick paste using oil(not water). I use olive oil.

You can store in fridge and it will stay good for 2 -3 weeks or freeze in ice cube trays.

Tomato tofu curry and chili broccoli

Serves 4 people

Tomato tofu curry and Chili broccoli

Tomato tofu curry

5 - 6 tomatoes chopped fine or 1 can chopped tomatoes
1 red bell pepper diced
1 onion finely diced
1 spoon curry powder
1/2 spoon cayenne or chili powder
3/4 spoon turmeric
a pinch of cumin seeds
1 slab tofu cut in squares
1 spoon green curry paste(optional)
salt to taste
1/2 cup coconut milk
1 tbsp butter + 2 sp oil

Heat butter + oil
When sizzles add onion, cumin seeds
saute for 10 seconds
add curry powder turmeric cayenne powder saute nicely
add tomatoes, red bell pepper, salt. Cover and cook for 6-10 minutes till tomatoes become mushy

now add coconut milk and green curry paste( if using.) Let it simmer
With hand held blender grind contents(if no hand held blender user food processor)
Add tofu simmer and serve with rice and chili broccoli(recipe below)

Chili Broccoli

3 teaspoon oil
1 teaspoon red chili flakes
3 to 4 garlic cloves crushed
2 heads of broccoli florets
salt to taste

Heat oil in a non stick pan when smoking add red chili flakes, when aroma comes add broccoli salt garlic.
Slightly stir and close with a a lid leave for about 5 minutes
It will be done.

Vegetable paratha


1/2 cup cauliflower, 1/2 cup broccoli,1 big russet potato STEAMED
1 small onion minced
1 table spoon of minced cilantro
1/2 spoon jeera
1/2 spoon red chilli powder
1 spoon tandoori masala or combination of dhania, jeera and pepper powder
2 teaspoon constarch

Mix and mash all the above ingredients

For dough:
2 cups atta + 1 spoon garlic powder+ salt
Mix into chapati dough consistency

roll dough
place stuffing
close it
roll it
cook on tawa

Simplest Alfredo

Our family loves alfredo sauce. I came up with the following recipe based on Perla Myers recipe.
Only difference is my version does not use heavy cream..

1 can evaporated milk
1/2 cup grated hard cheese (use parmesan or parmesan+romano or parmesan+asiago)
4 table spoon light butter
salt to taste
pepper to taste
1 garlic clove crushed nicely into paste
1 teaspoon corn starch

add cornstarch to 2 tablespoon water and mix nicely.

Take a wide pan. Keep in medium flame
Add butter
once melted add garlic saute for another minute

If needed lower the flame
now slowly add milk, salt pepper, cornstarch mixture
Mix nicely.

Once the starch is nicely incorporated into milk
start adding cheese and mix simultaneously
once cheese is completely mixed into milk
leave it for a few minutes
you will see the sauce bubbling and thickening
once it thickens to a stage where it can coat the back of spoon
switch off flame
toss it with hot pasta.
